Description
Mesquite is popular in the Southern United States, especially Texas, where BBQ means BEEF. With its rich and distinct flavor, Mesquite wood ideally pairs with brisket, steak, and other cuts of beef, but it also complements other meats such as pork and lamb.
With Charcoal Directions
- Light charcoal using your preferred method.
- Several minutes before cooking, add 3-5 dry chunks for a standard sized grill (add more chunks if using a larger smoker).
- Continue to add chunks every 20-30 minutes during the cooking process to infuse that great smoke flavour into your cooking.
Without Charcoal Directions
- Stack dry cooking chunks in a pyramid on top of a solid fire starter (leave the rough edge exposed) then light the fire starter.
- Let the chunks burn for approximately 15 to 20 minutes with the lid on and all vents open.
- Wait for flames to subside, then open the lid and the spread the chunks out evenly.
- Place food on the grill and close the lid again.
- (Cooking with the lid closed prevents flare ups and allows the wood to give a better flavour to your food as it cooks).
- Experiment to find your desired level of smoke flavour. Also try mesquite smoke flavour on your favourite vegetables and cheeses.
